Healing hearty vegetable stew for the soul

Much needed wholesomeness for our mind body and soul.

Ingredient:stew
3 garlic cloves
1 large red onion
1 med/large potato
1 medium carrot
1 small aubergine
1 small courgette
1 red pepper
1 large handful diced firm tofu
5 cherry tomatoes
2 400ml cans vine ripened or chopped tomatoes
1 vegetable stock cube,
1 bay leaf, basil,
pink Himalayan salt,
cracked black pepper,
Olive oil.

Directions:
1) Heat a large splash of olive oil in a deep pan and add diced onions and garlic. Simmer until soft.
2) meanwhile cube vegetables and add to pan as you chop: potatoes, carrots, aubergine, courgette, pepper, tofu, cherry tomatoes. Add bay leaf and cook covered on medium heat stirring occasionally until soft.
3) Add 2 tins tomatoes, 1 cup of water and a vegetable stock cube. Simmer for another 10 minutes with lid on.
4) Season with salt, pepper and basil and add a little water to gain the desired consistency.

This will make about 4 servings 🙂
