Vegan courgette bangers and creamy avocado mash

Vegan courgette bangers and creamy avocado mash….full of umami flavours! Next time il try to sauté the baby courgettes whole to make them look like sausages :-p

Ingredients:bangers mash
2-3 medium white potatoes
1 ripe avocado
1 or 2 baby courgettes
3 mushrooms
1 small onion
2 garlic cloves
Salt, pepper, soy sauce, yeast extract to flavour
Olive oil
Parsley

Directions:
1) dice potatoes and boil until soft with a little salt and olive oil
2) meanwhile, slice courgettes, mushrooms, onion and garlic.
3) fry onion and garlic in olive oil on medium heat until lightly brown then add courgettes and mushrooms and sauté until Brown. Season with salt, pepper, tiny dash soy sauce and a tiny teaspoon tip dipped in yeast extract/marmite.
4) drain cooked potatoes and mash together with whole avocado and a dash of olive oil. Season to taste with salt, pepper and a little chopped parsley.
5) contain those cravings until you’ve dished it out neatly and taken a nice photo, then enjoy the taste of mother earths goodness.

Loved this for those non vegans out there…a poached organic egg on top would be sublime.
