Scrumptious vegetarian fried rice

139Oh so simple, oh so good!

Recipe:

Stir fry diced garlic, onion, carrot, mushroom, red pepper, firm tofu, spring onion, cherry tomato and cashews. Scramble in an egg and mix in pre-cooked rice seasoned with light soy sauce, sesame oil, pink salt and brown sugar. Adjust to taste. Top with sesame seeds and fresh spring onion.

(Omit egg for vegan option)
